Cacao Walnut "Brain" Bites

These little bites are called "brain bites" because, (1) walnuts and cinnamon have both been associated with improved brain function (have you ever noticed how a walnut actually resembles a human brain?), (2) walnuts and flaxseed are both high in omega 3 fatty acids--which makes them anti-inflammatory (also good for the brain), and (3) coconut oil feeds your brain the healthy fats it needs. The addition of cacao not only adds that chocolaty flavor (a must), but also adds antioxidants and improves blood circulation which improves focus and mood! 

Yields

Approx. 18 One-Inch Bites

Ingredients

2 cups raw organic walnuts

1/4 cup organic cacao powder (the superfood, not cocoa powder--though you can use good quality cocoa powder)

3 Tbl. organic cacao nibs

15 Medjool dates, pitted

2 Tbl. ground organic cinnamon

3 Tbl. ground organic flaxseed

1 Tbl. coconut oil

10 drops liquid stevia (I like Sweetleaf brand, vanilla cream flavor) -- optional

pinch of sea salt

1/4 cup coconut flakes (optional)


Directions

Place walnuts in food processor or blender, and blend for a while until a moist paste starts to form.

Add the rest of the ingredients, except coconut flakes, to the nut paste in the food processor, and blend again until it comes together to form a dough.

Shape dough into 1" balls. If desired, roll in coconut flakes for a white snowy look.

Refrigerate.


Notes

If the dough doesn't come together, add a bit more coconut oil. Also, if you love cinnamon, feel free to add another tablespoon!
