It's helpful to hard boil a few eggs in advance and leave them in your fridge. That way you can whip this salad up in less than 5 minutes.
10 minutes for the egg
1 Serving
For the salad:
2 cups leaf lettuce (such as bibb or boston, or your variety of lettuce), washed and dried
1 hard boiled egg (preferably organic pasture raised), peeled
1-2 oz Pecorino Romano cheese (a wedge for grating, not the pre-ground stuff)
1/4 avocado, cubed
1-2 Tbl. green onion, chopped
For the dressing:
2 Tbl. hIgh quality extra virgin olive oil
2 Tbl. fresh-squeezed lemon juice
A pinch of Salt
Fresh ground black pepper, to taste
Break the lettuce into bite size pieces and place in a bowl. Using the large holes on a box grater or hand-held grater, grate the hard boiled egg on top. Then grate the Pecorino Romano cheese on top of that. Add the avocado and green onion. Add all of the dressing ingredients and toss. Serve immediately.
The ingredients in this salad are simple, but the flavors come together to make magic. The egg and cheese blend together to be salty and creamy, and the lemon gives it fresh zing. As always, the higher quality ingredients you use (especially the olive oil and the cheese), the more magical this salad will be!
