1/4 cup white balsamic vinegar
1 clove garlic, minced
1 Tbl. Dijon mustard
1/2 cup extra virgin olive oil
1/2 tsp. salt
Pepper
Blend all of the ingredients together in a NutriBullet or blender, or mix them in a bowl.
This dressing tastes great on spring mix or other soft lettuces (but it's good on any lettuce, really), with shavings of parmesan or pecorino, and some sliced avocado.
